Chloë Dempsey is a passionate permaculturist from North Cork with a deep-rooted love for plants, people, and the land. She studied permaculture for two years at Kinsale College, where she began weaving together the principles of sustainable design, food cultivation, and community resilience.

Her hands-on experience spans market gardens, private landscapes, and busy plant nurseries — always digging, growing, and learning. Chloë worked as a fermentation assistant at the Ballymaloe Cookery School, where she immersed herself in the living world of kombucha, kefirs, sauerkraut, and the transformative power of bacteria and yeasts.

A dedicated community educator, Chloë collaborates with organisations such as Regenerate, CECAS, and Common Knowledge, facilitating workshops that celebrate wild foods, seasonal growing, and traditional skills. She regularly leads fermentation workshops, guiding participants through hands-on processes that reconnect people with the magic of preservation.

Chloë has a strong focus on foraging and immersive food experiences. She has collaborated with local restaurants and festivals to create unique events that bring people into direct relationship with the landscape — including Wild Walk & Garden Tasting experiences such as her event at Proby’s Kitchen during the Cork on a Fork Festival. Her work often blends foraging walks with practical demonstrations, tastings, and storytelling, creating rich, sensory experiences rooted in place.

Alongside her practical work, Chloë is also an engaging speaker and educator. She has delivered talks and workshops in further education settings, including Cork College of FET – Tramore Road Campus and Cork College of FET – Kinsale Campus, where she shares her knowledge on, fermentation, nutrition and preservation.

Through all her work, Chloë is driven by a desire to reconnect people with nature, edible plants, and heritage food traditions.
